Gnocchi is a classic Italian dish usually made of potato-based pasta. Since I wanted to make a healthy version that requires no flour and potato. I made this gnocchi with sweet potato and tapioca flour. Give it a try and let me know your thoughts.
Sweet Potato & Tapioca Gnocchi
Ingredients:
4 large to medium size Korean or Japanese Sweet Potato
2-21/4 cups of Tapioca Flour
1 egg
Pinch of grated nutmeg
Grated Parmesan cheese to serve

1. Peel the sweet potato and cut into small pieces. Boiling water and add a pinch of salt. Once the water is boiling add the potato pieces. Cook the potatoes until soft – test with a fork -should go in easily. Drain and get it ready to mash. (like mash potato)
2. Spread the Tapioca flour on to the table and apply some to the roller so it doesn’t stick. Then put the potato in the middle and put the egg inside and mix it by hand.
3. Once the consistency is like a pizza-dough-like consistency, it should be ready to roll out flat with the roller. The dough should be light to the touch and not sticky. (It should feel like Play-doh, remember that!?)– When you roll it out, do not roll it flat like pizza dough, but rather leave the thickness about ¼ inches.
4. Now take the ¼ inch flattened dough cut ½ inch strips the length of a pencil size.
5. Now cut the pencil strips into thumb size nuggets.
6. Then, take a fork and cut in into the tip of the fork size and then roll on top of the fork to get the shape. Alternatively, you can use your thumb as well.
7. In a wide saucepan fill the water to the middle of the pot. When the water boils, put the Gnocchi in the boiling pot (a couple at a time so you don’t get a burn from the hot water).
8. As you put them in the water, the once that is done will rise to the top. It takes about 3-4 minutes. You can put it in a bowl and drain it out. (I put red sauce on top and with a spoon) I mix it carefully/gently mix in the tomato sauce. Be very gentle as the Tapioca is extremely soft coming out of the hot water.
9. Serve with parmesan cheese.
